Innovation for probiotics in ambient foods

 

Swedish Medipharm and Sensient Flavors, the Nordic subsidiary of American Sensient Technologies, have jointly developed a functional food component. It is a crisp, flavoured cereal with a coating layer containing Lactobacillus F 19. The probiotic remains stable when stored in dry conditions in room temperature in 6 months. Furthermore, it is expected to sustain ice cream production and distribution conditions. The product is designed for applications in breakfast cereals confectionery and ice cream. 5 % addition  in the breakfast cereal provides the recommended daily intake of Lactobacillus. The product is now due to be launched globally.  “ –This product has got a huge potential for application in functional foods. It is the solution to the problem of getting probiotic food products outside the dairy segment”, says Kerstin Holmgren, R&D manager at Medipharm AB.
