Stay healthy -eat bacteria!A researcher at the Faculty of Engineering, Lund University, will shortly present a very interesting study that maybe will change the future consistency of our foods. The researcher Emma Årsköld has investigated bacteria that can substitute additives from animals in food products. Årsköld has managed to find a way to increase the production of EPS, expopolysaccharides a polymer that increases the thickness of fluids, in two different acid lactic bacteria, Lactobacillus reuteri and Pediococcus parvulus. In her research she has revealed under which conditions the lactic acid bacteria grow best, and she has also managed to optimize a production process. The growth that she has managed to achieve is substantial and this opens for successful commercial use of Emma Årskölds findings. As a result, liquid or- semi-liquid food products can get a creamy texture and a good taste without additives at the same time as the products can be healthier for the consumers. “The result from this research project creates really interesting possibilities for the food industry. Hopefully we can look forward to natural dairy products without additives in the future”says Emma Årsköld, researcher at the Institute of Chemistry, the department of Applied Microbiology, Lund university.
